Trinidad Tomato Choka

Cooking Instructions
Broil tomatoes in a baking sheet until skins are charred and flesh is beginning to fall apart. 10-15-minutes on medium heat.
This step can also he done on the stove top over a grill.
Some people take out the burnt part. I like the smokey charred taste personally.
When it looks chard and start falling apart, take tomatoes and crush either in a food processor or it can be done manually.
Add all ingredients except herbs.
Cut all other ingredients into small piece.
Just before serving top with cilantro, and chives.
Ingredients
• 5 medium tomatoes
• 4 cloves garlic
• 11 Scotch Bonnet pepper
• 1 large onion
• 1 Bunch Cilantro (optional)
• Kosher salt
• Freshly ground pepper to taste
