Trinidad Tomato Choka

Cooking Instructions

  1. Broil tomatoes in a baking sheet until skins are charred and flesh is beginning to fall apart. 10-15-minutes on medium heat.

  2. This step can also he done on the stove top over a grill.

  3. Some people take out the burnt part. I like the smokey charred taste personally.

  4. When it looks chard and start falling apart, take tomatoes and crush either in a food processor or it can be done manually.

  5. Add all ingredients except herbs.

  6. Cut all other ingredients into small piece.

  7. Just before serving top with cilantro, and chives.

Ingredients

• 5 medium tomatoes

• 4 cloves garlic

• 11 Scotch Bonnet pepper

• 1 large onion

• 1 Bunch Cilantro (optional)

• Kosher salt

• Freshly ground pepper to taste
